Despite its importance, production know\u2011how has&nbsp;remained&nbsp;largely empirical, with limited scientific insight into the&nbsp;fungus\u2019s&nbsp;biology and fermentation.&nbsp;This recent research has&nbsp;identified&nbsp;a key transcription factor controlling spore production,&nbsp;the commercial form of the fungus,&nbsp;and enabled optimization of its industrial\u2011scale cultivation.&nbsp;&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-why-this-research-matters-nbsp\"><span class=\"ez-toc-section\" id=\"Why_This_Research_Matters\"><\/span><strong>Why This Research Matters<\/strong>&nbsp;<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\" id=\"h-why-this-research-matters-expert-contributor-dr-aymeric-paradis\">This fundamental research aims to strengthen industrial cheese performance by advancing the scientific understanding and control of Penicillium&nbsp;camemberti, a microorganism central to specialty cheese making.&nbsp;&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This original research led to a 1.7-fold increase in process productivity, along with deeper understanding and control of Penicillium processes. It also enabled the development of new tools to advance knowledge of the&nbsp;fungus, and&nbsp;optimize&nbsp;it from the perspective of industrial production.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\" id=\"h-why-this-research-matters-expert-contributor-dr-aymeric-paradis\">This was achieved by developing an image analysis tool that automatically counts Penicillium spores\u2014saving time for operators and speeding up experiments.&nbsp;&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\" id=\"h-why-this-research-matters-expert-contributor-dr-aymeric-paradis\"><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-about-the-authors-nbsp-nbsp\"><span class=\"ez-toc-section\" id=\"About_the_Authors\"><\/span><strong>About the Authors&nbsp;<\/strong>&nbsp;<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">IFF expert Aymeric Paradis&nbsp;conducted this research&nbsp;in collaboration with Universit\u00e9 Paris Cit\u00e9, the work bridged academic and industrial environments. However, this&nbsp;know-how&nbsp;remains&nbsp;largely empirical, and theoretical knowledge about the biology and cultivation of P.&nbsp;camemberti&nbsp;is limited, as&nbsp;evidenced&nbsp;by the small number of scientific publications or patents on its fermentation.&nbsp;&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Our research in the physiology and genomics of this filamentous fungus has led to the identification of a transcription factor essential for spore production, the commercial form of P.&nbsp;candidum, and has&nbsp;optimized&nbsp;its production on an industrial scale. Conducted at various scales, from laboratory to pilot, these studies have contributed to a deeper understanding of the asexual reproduction of the microorganism, both at the macroscopic and microscopic levels. Thus, science proves to be a valuable lever for improving and stabilizing the production of this fungus, central to the making of historical cheeses. <br><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-practical-applications-in-food-biosciences-nbsp\"><span class=\"ez-toc-section\" id=\"Practical_Applications_in_Food_Biosciences\"><\/span><strong>Practical Applications in Food Biosciences<\/strong>&nbsp;<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Thanks to this innovation, researchers were able to study how Penicillium\u00a0camemberti\u00a0behaves under different <a href=\"https:\/\/www.iff.com\/es\/food-beverage\/food-bioscience\/cultures\/\" type=\"page\" id=\"6378\" target=\"_blank\" rel=\"noreferrer noopener\">fermentation <\/a>conditions and even\u00a0identify\u00a0a key factor that controls spore formation. This breakthrough opens the door to better control of spore production, which is essential for improving processes in food fermentation.\u00a0<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-this-research-was-conducted-nbsp\"><span class=\"ez-toc-section\" id=\"How_this_research_was_conducted\"><\/span><strong>How this research was conducted<\/strong>&nbsp;<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Fermentation conditions screening and sequencing data analysis were performed at the Paris Interdisciplinary Energy Research Institute (LIED), part of Paris Cit\u00e9 University.
