This research highlights why dairy producers need customer orientated strategies in managing the phage risk, particularly when using heat treatments. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">By consolidating decades of research this study shows that heat treatment alone is not a reliable phage-control strategy in <a href=\"https:\/\/www.iff.com\/es\/food-beverage\/dairy\/\" data-type=\"page\" data-id=\"5104\" target=\"_blank\" rel=\"noreferrer noopener\">dairy<\/a> processing. Phage survival depends on the specific isolate, the dairy matrix, and how heat is delivered. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><a href=\"https:\/\/www.iff.com\/es\/food-beverage\/dairy\/\" data-type=\"page\" data-id=\"5104\" target=\"_blank\" rel=\"noreferrer noopener\">Dairy<\/a> plants should therefore replace universal \u201ckill steps\u201d with validated, product-specific multi-hurdle control strategies.<\/p>\n\n\n\n<h2 id=\"h-why-this-research-matters\" class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Why_This_Research_Matters\"><\/span>Why This Research Matters<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\" id=\"h-hear-more-from-the-expertsexpert-contributor-dr-damian-magill\">Bacteriophages can infect starter <a href=\"https:\/\/www.iff.com\/es\/food-beverage\/food-bioscience\/cultures\/\" data-type=\"page\" data-id=\"6378\" target=\"_blank\" rel=\"noreferrer noopener\">cultures<\/a> and cause delayed or failed fermentations. This can result  in production disruption, downgraded products, reduced yields, and major financial losses. The research challenges the fact that current heat treatment protocols reliably control this risk. The study highlights that performing tests within the actual product matrix and under experimentally consistent conditions is crucial for obtaining industrially relevant results regarding phage heat treatment protocols used by dairy product manufacturers. In addition, one should pay attention to complete inactivation and survivor kinetics rather than simple average log reduction when optimizing these protocols.<\/p>\n\n\n\n<h2 id=\"h-how-this-research-was-conducted\" class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"How_This_Research_Was_Conducted\"><\/span>How This Research Was Conducted<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">The authors conducted a data-driven literature review, compiling more than 1,000 heat-inactivation observations from over 20 studies published between 1954 and 2022. The dataset included multiple phages, bacterial hosts, temperatures, exposure times, and suspension matrices.
