Henrik Max Jensen—known simply as “Max” to his colleagues at IFF—is a Principal Scientist and Technical Fellow whose work sits at the cutting edge of bioscience. With a deep focus on omics technologies, Max is helping unlock the secrets of the gut microbiome, revealing how microbial bioconversions can be harnessed to create innovative solutions for health and nutrition.

With OMICS technologies, we’re not just studying bacteria—we’re discovering how they interact with the host and how we can guide those interactions to deliver better products and better health

Max’s team has played a pivotal role in launching new food enzymes, including Bond Lacta and Nuica for lactose reduction and fiber generation in dairy, and beer-clear enzymes that support processing in the brewing industry. But what excites him most is the future of next-generation probiotics. Through advanced methods of identification and analysis, Max is helping shape the next wave of microbiome-based products that will soon reach the market.

His work doesn’t just stop at the lab bench—it’s about understanding the dynamic communication between host and gut, and translating that into real-world applications that benefit customers and consumers alike.
