Protein may be one of the biggest priorities shaping food and beverage innovation today, but adding more of it to a product is rarely as simple as increasing a number on the nutrition label. 

Consumers may be seeking products with more protein, fiber and nutritional value, but they still expect an experience that tastes enjoyable, satisfying and familiar. 

That is where vanilla can play a powerful role. 

From protein shakes and meal replacements to barsdairy products, plant-based beverages and fortified baked goods, vanilla flavor can help soften difficult notes, support sweetness perception, add warmth and bring greater balance to the total flavor experience. Sometimes it is the recognizable hero flavor. In other formulations, it works quietly beneath chocolate, coffee, caramel or other tonalities without ever being identified as vanilla. 

Its role depends on the product, the base, the processing conditions and the consumer. But across applications, vanilla remains one of the most versatile assets in the toolkit of flavor designers and product developers who work in health-forward innovation. 

When More Nutrition Creates More Flavor Challenges 

Proteins, fibers and other nutritional components bring their own inherent tastes and textures to a formulation—and those characteristics are not always desirable. 

Fiber can create cereal-like, fibrous or dusty sensations. Nutritional bars may become dense, sticky or drying, while highly fortified beverages can develop bitterness, metallic notes or a lingering finish. 

“The materials used in high-protein and high-fiber products often have a strong taste of their own, and it is usually not the taste the product developer or consumer wants,” Lorna Hide, Senior Flavorist at IFF explains. “Vanilla is often used for masking, even in products that are not meant to taste like vanilla.”

The specific challenge can also shift significantly from one base to another. A flavor that performs well in dairy may behave very differently in oat, soy, pea or another plant-based system. Acidity, fat content, protein load, fiber type, sweetness, processing and shelf life can all influence which parts of a flavor become prominent or suppressed. Processing conditions such as UHT, extrusion or baking can also affect vanilla’s thermal stability and final flavor profile, making it important to select the desired vanilla profile and tonality upfront. 

IFF Creation Director and Senior Flavorist for Dairy, Sylvaine Declerck, notes that these interactions become more significant as protein levels rise. 

“The more protein you have, the more interaction you are going to have and the greater the effect on the flavor profile,” she says. “You have to look at the entire base, select the right modulation tools and then build the tonalities around it.” 

That means there is no universal vanilla flavor solution for every protein shake, bar or fortified food. The right approach starts with understanding the base itself. 

Vanilla as a Quiet Technical Tool

Vanilla is often thought of first as a flavor: creamy, sweet, warm and familiar. But within a more complex flavor system, it can perform several functions at once. That flexibility starts with selecting the right form and profile of vanilla based on the product base, labeling goals and desired intensity — a process that requires close collaboration between flavorists and application experts. 

Certain vanilla profiles or even vanillin on its own can help round off bitterness, reduce the perception of harsh edges and bring warmth to a formulation. Vanilla can also reinforce creamy character and enhance perceived sweetness independent of actual sugar content, a feature particularly valuable in reduced-sugar or sugar-free reformulations. 

Once the most challenging off-notes have been addressed through taste modulation, vanilla can help connect the remaining elements of the flavor profile. 

“After you’ve done the masking, you may add vanilla through the middle of the flavor to round everything off and make the product seem sweeter,” Lorna shares. “That can be ideal in products with little or no sugar.” 

Vanilla can also play an important masking role in reduced-sugar protein products formulated with high-intensity sweeteners, helping soften off-notes such as stevia’s licorice-like character, bitterness and lingering aftertaste. 

In some products, only a small amount of vanilla is needed. A plain cake, for example, may contain vanilla not because it is intended to be distinctly vanilla-flavored, but because the vanilla helps soften eggy or floury notes. Chocolate frequently contains vanillin to balance bitterness and create a smoother, more complete profile. 

IFF Principal Flavorist Helen Kane describes vanillin as a deeply familiar flavor building block that can contribute sweetness, creaminess and perceived mouthfeel as well as recognizable vanilla character. 

“It is very multifaceted,” Helen explains. “In a basic chocolate product, vanillin can round off the bitter notes. In cakes, biscuits and fillings, even a small amount can provide the base that brings the whole product together.” 

The same principle can be applied in protein-forward and health-focused products. Vanilla may support the lead flavor, build a creamy foundation beneath it or operate as a less-visible part of the modulation system. 

Why Vanilla Remains a Core Consumer Choice 

Vanilla’s technical value is only one part of the story. It is also one of the flavors consumers are most willing to choose repeatedly. 

When IFF teams examined popular flavors in high-protein products, they expected to see demand dominated by novel dessert combinations and more adventurous profiles. Instead, the strongest choices remained familiar staples — and vanilla continued to lead. 

“You can see many fun flavor combinations in the market, but when you look at the top-selling choices, consumers still want the flavors they know,” shared IFF Dairy Designer Merel Maas. “Vanilla is everywhere. When a new product range launches, there almost always needs to be a core vanilla option.” 

That familiarity can be especially important in products consumed regularly. A protein beverage might be used every morning or post-workout. A nutritional shake could be consumed several times a day. A meal replacement or medical nutrition product may become part of a long-term routine. 

Novelty may encourage an initial trial, but familiar flavors can offer the versatility and comfort needed for repeat consumption. 

Vanilla also provides manufacturers with a flexible foundation for a broader portfolio. It can stand on its own or support profiles inspired by cookies, cereals, caramel, coffee, chocolate or bakery products. Its versatility and compatibility as a base note also allows brands to customize vanilla powders and shakes by blending with fruit, coffee, nut butters or other additions. 

Designing for Dairy and Plant-Based Systems 

Although vanilla performs well across many applications, it does not behave identically in every base. 

Dairy proteins and plant proteins have different structures, interactions and inherent flavor characteristics. Depending on protein-flavor binding, fat content and the pH of the matrix, certain facets of a vanilla profile can become muted or altered, requiring the flavor to be carefully tailored to the specific product. 

Historically, developers often responded by adding more flavor. But greater intensity does not always result in greater consumer liking. 

Merel explains that the more effective approach is often to identify which parts of the flavor are being suppressed or exaggerated by the base, then rebalance the profile accordingly. 

“In plant-based products, the answer is not simply to push the flavor higher and oversaturate the product,” she says. “We look at which parts of the flavor are not coming through and how we can rebuild the balance for that specific base.”

This is particularly important as consumer expectations for plant-based products become more nuanced and diverge by different segments. 

Some consumers still want a plant-based beverage that feels close to dairy. Others expect to taste the authentic character of oats, coconut, soy or another source. Rather than covering the base completely, developers may need to soften only the most challenging characteristics while preserving the identity consumers associate with the product. 

Vanilla can help smooth, soften and round out the base, but the precise profile and dosage must be carefully selected. The same warm vanilla tonality may reduce an off-note in one soy protein system while amplifying beany character in another, depending on the protein source and processing. 

This variability requires dedicated screening and iterative application tastings to identify the right solution. 

Supporting Smaller Portions and Greater Nutrient Density 

The potential value of vanilla becomes even more significant in products designed for consumers who need a high concentration of nutrition in a relatively small serving. 

Medical nutrition products, meal replacements and beverages developed for older adults or people recovering from surgery may need to deliver protein, vitamins, minerals and other nutrients in a compact and easy-to-consume format. Many of these formulations carry substantial taste and texture challenges before flavor is added. 

A similar need is emerging among some consumers taking GLP-1 medications. Because they may feel full more quickly and consume smaller portions, every eating or drinking occasion may need to deliver more nutritional value. 

At the same time, some GLP-1 users report changes in taste preferences or greater sensitivity to sweetness, bitterness and flavor intensity. Products developed for this audience cannot assume that the traditional sports-nutrition approach—large portions, intense flavors and high-intensity sweeteners—will deliver the desired experience. 

“Many GLP-1 consumers prefer smaller portions throughout the day because a large serving can feel overwhelming,” Merel says. “The product may need to carry a great deal of nutrition in a smaller volume, while also using lower sweetness and lower flavor intensity.” 

Vanilla can offer several advantages in this context. Its familiarity can make a nutrient-dense product feel less medicinal. Its warm, creamy character can provide comfort and reassurance. Carefully selected vanilla tonalities can also help manage bitterness and round out the flavor without requiring excessive sweetness or intensity. 

For consumers using nutritional products during illness, recovery or other difficult circumstances, familiarity can carry emotional as well as sensory value. 

“In medical nutrition, people may be consuming the product in an environment where a great deal is already happening,” explains Merel. “A warm, sweet vanilla profile can feel familiar and comforting. They may be less interested in exploration and more interested in something they know.” 

From Masking to Complete Flavor Architecture

The strongest nutrition-forward products are not created by adding a masking flavor at the end and hoping it covers the problem. 

Taste modulation may first be needed to address bitterness, sourness, astringency, metallic notes or lingering effects. Sweetness and mouthfeel may need to be rebuilt. The hero flavor must then be designed for the specific base and processing conditions. 

Vanilla can contribute at several stages of that process, but it works best as part of a complete flavor architecture. 

Sometimes IFF flavorists receive an established base and must improve its sensory performance. In other cases, flavor designers become involved while the product is still at the concept stage, helping customers understand how protein sources, stabilizers, colors, sweetness systems and other formulation decisions may affect the final flavor. 

As Helen puts it, “The customer is the expert on the base, and we are the experts on flavor. The best results come from looking at everything holistically and working through the challenges together.” 

That collaboration becomes even more important as manufacturers explore new protein sources, higher fortification levels, smaller serving formats and products designed for more specialized nutritional needs.

A Familiar Flavor with New Possibilities 

Vanilla has long been one of the world’s most recognized and widely used flavors. Yet its value in the next generation of health-forward food and beverage products extends far beyond familiarity. 

Vanilla can help manage difficult off-notes, support sweetness in reduced-sugar formulations, bring creamy and rounded character to leaner systems and create a bridge between nutritional functionality and sensory enjoyment. It can serve as the hero, support another profile or work quietly within the formulation without being recognized at all. 

Its versatility does not eliminate the need for careful formulation. Every protein, fiber, base and application creates a different sensory system. But with the right expertise, vanilla flavor offers manufacturers a broad and adaptable toolkit for making nutrient-dense products more desirable—and more likely to become part of consumers’ everyday routines. 

For Lorna, that continual problem-solving is part of what makes flavor creation so compelling. 

“The more you learn, the more you realize how much more there is to learn,” she shares. “You can have three flavorists in a room and each will approach the same challenge differently. That is why we never stop exploring.” 

As nutritional demands become more complex, vanilla’s next chapter may not be defined simply by how strongly consumers can taste it, but by everything it helps make possible.
