According to Mike Cains, IFF’s regional technical sales manager for cheese cultures and enzymes, the biggest challenge is variability in customer expectations. Different markets often require different performance characteristics. These can include optimal browning, longer stretch or specific melting properties. “Everybody wants stretch. Everybody wants melt. But exactly how much stretch, how much browning and how much melt can vary quite significantly depending on where the product is going,” he explains.For manufacturers, the opportunity lies in creating products that can be tailored to varying market requirements. At the same time, they need to avoid adding unnecessary complexity to production. Increasingly, producers are turning to culture and process innovations. These innovations allow them to fine-tune functionality while maintaining consistency. Europe: Finding new value in every liter of milk Logistics creates another challenge. Much of the region’s pizza cheese is transported long distances. It may also undergo freezing and thawing before reaching consumers. “You’re not just making a cheese that performs today,” says Cains. “You’re making a cheese that has to perform weeks or months later.” This has driven greater focus on functionality throughout shelf life. Cains points to a recent example where a pizza cheese producer switched from its existing starter culture to IFF’s CHOOZIT® mozzarella cultures. Historically, pizza cheese has focused primarily on texture and functionality. India’s pizza market continues to expand rapidly, creating enormous opportunities for dairy manufacturers. Driven by urbanization, changing lifestyles and the growth of quick-service restaurant chains, demand for pizza cheese continues to increase across the country. For producers, the challenge is no longer simply meeting demand but doing so efficiently and consistently. “The market is growing quickly, and producers need solutions that allow them to scale while maintaining consistency,” says Dnyaneshwar Chavan, IFF’s senior application specialist in the region. It is a requirement that is accelerating investment in automation, process optimization and manufacturing technologies. These investments help improve repeatability and consistency in production. One particularly important area of opportunity is reducing the time required to achieve optimal cheese functionality. Traditionally, mozzarella production involves days of ripening before the desired performance characteristics emerge. Reducing ripening times can improve throughput. It can also reduce inventory requirements. In addition, it allows manufacturers to respond more quickly to customer demand. In a high-growth market, these gains can deliver substantial commercial advantages. India: Meeting explosive demand without compromising quality Helping manufacturers achieve these gains requires improvements across several stages of the cheesemaking process. That consumer mindset creates a different innovation agenda. While health and wellness trends continue to influence broader food markets, pizza cheese manufacturers in the region are largely focused on preserving the sensory experience consumers love. At the same time, they are looking for ways to improve operational performance. The opportunity lies in delivering better economics without compromising indulgence. Yield optimization remains a major priority as producers look for ways to maximize profitability. However, unlike some markets, manufacturers must often balance moisture retention targets with the requirements of sliced cheese applications, which remain particularly important across parts of Latin America. As production volumes increase, maintaining reliable fermentation becomes increasingly important. Phage management has therefore become a growing area of focus. It should have small, tiny blisters that are evenly browned with a nice light background.” Delivering these attributes consistently while improving efficiency is where many manufacturers see their greatest opportunity. “There is always pressure to get more cheese per vat and improve productivity. The challenge is doing that without negatively impacting functionality.” Functionality must also be maintained throughout shelf life.
