Hispanic Heritage Month is a time to honor and celebrate the rich cultural contributions of Hispanic and Latinx communities. At IFF we celebrate the diversity within the these vibrant cultures all year long through the joy of food. We’re excited to share recipes from our very own IFF Principal Chefs Ingreth Kastorsky and Joe Scott. These talented chefs have a deep appreciation for Hispanic flavors and cooking techniques and they’re here to showcase how classic Hispanic dishes can be reimagined to fit modern trends. Galinhada (plant-based)

The History Behind the Dish with Chef Ingreth Kastorsky:


Galinhada a beloved culinary tradition hails from Minas Gerais a Brazilian state in the southeastern region of the country. This hearty rice dish typically features tender chicken and a delightful array of seasonings. However our version is plant-based offering a traditional dish with a modern twist.
In Latin America rice with chicken known as Galinhada or Arroz con Pollo in some regions holds a prominent place on dining tables. This delectable dish combines chicken pieces rice an assortment of vegetables and a blend of various spices. Saffron often infuses the rice with a vibrant yellow hue and distinctive flavor.
The combination of chicken and rice is a culinary staple across many Latin American countries each adding its unique twist. Beyond satisfying hunger sharing this meal is a social and familial experience symbolizing tradition togetherness and culinary opulence that characterizes the region. Chef Ingreth’s plant-based Galinhada pays homage to this cherished tradition showcasing the unique and beloved aspects of Latin American cuisine. “This dish reminds me of the mothers and grandmothers before me placing this dish down on the center of the table for a large celebration with family and friends”.

How Hispanic Culture Has Influenced My Cooking with Chef Joe Scott:

Chef Joe Scott brings a wealth of culinary experience including a degree in chemistry to his work at IFF. His role in the meat alternative team allows him to explore new and unique food ideas. “Growing up in New York I was exposed to a diverse array of cultures forming strong connections with the Puerto Rican community. I was inspired by the Latin culture’s emphasis on family and celebration”.
Throughout his career Chef Joe spent time living and cooking in New Orleans and South Florida regions often described as the “Northern Caribbean.” These experiences significantly influenced his culinary preferences especially his love for Caribbean food.
One outstanding example of how this influence has translated into culinary design at IFF is his plant-based version of slow-roast pork served with pigeon peas and rice known as Vegan Pernil y Arroz con Gandules. He incorporates the vibrant flavors of Mojo Criollo to elevate the dish creating a mouthwatering fusion of tradition and innovation.
