How We Help

SPEZYME® alpha-amylases convert cooked starch to soluble dextrins in the liquefaction process. These dextrins may be further converted to multiple products using different process steps, with the potential for significant energy savings.

Key Benefits and Applications

When used in starch liquefaction, IFF’s SPEZYME® alpha-amylases provide excellent stability against high temperatures and low pH with little dependence on calcium levels. Providing greater benefits than traditional amylases alone, SPEZYME® alpha-amylases offer robust performance under various process conditions:

  • Thorough and reliable removal of residual starch, leaving no iodine-staining material in dextrose hydrolysate.​
  • Rapid viscosity reduction, allowing high solids liquefaction, for throughput gains and reduced evaporation costs.​
  • Minimal spin-tube sediment in dextrose hydrolysate, correlating with good hydrolysate filtration.​
  • Operation at lower pH to minimize dextrose loss to maltulose and color formation, reducing chemical and refining costs.​
  • Operation without added calcium in most systems.
